Mosterdsoep – Recipe for the Dutch mustard soup
A few years ago, during my Dutch course in my bachelor’s degree, I first heard about the Dutch Mosterdsoep. At first I thought what a funny combination it must be and put the thought of this mustard soup aside for now.
But for some reason, I never quite forgot the Dutch mustard soup and now it’s time to start working on a mustard soup recipe myself. Fortunately, Holland is not too far away, both regionally and socially. And since I now live in the Düsseldorf area, which turned out to be the mustard capital, I can compare the Dutch mustard soup directly with the Düsseldorf mustard soup.
But here is my version of the Dutch Mosterdsoep for now.

3. Now add the flour while stirring until butter and flour have combined. Alternatively to the flour, you can use some sauce thickener.
4. Then pour in the vegetable stock, stir well and let everything come to the boil and simmer at low heat for 10 minutes.

Dutch Mosterdsoep – My conclusion
I am slowly becoming a little soup lover. The Dutch mosterdsoep reminds me of a simple cheese soup when it is prepared and tastes at least as good the next day when warmed up. I think this soup fits in any case as a warming up in winter but also as a starter to many other dishes.
