Kedgeree is a popular rice dish in England, which was influenced by the colonial period in India. The kedgeree can be prepared with only one pan, it is a great alternative for the festival or camping vacations.

In this recipe, I show you the very uncomplicated camping version.

Recently I was with friends at the Summerjam Festival in Cologne. Since I may count myself among the lucky owners of a beautiful old VW camping bus, we took advantage of this small form of luxury there as well, of course.

It’s quite practical to have a small camping kitchen at hand when camping or at the festival. This was also the reason for me to provide my friends with a few treats away from canned ravioli on the weekend.

Don’t you think that camping is also a good way to cook something creative? There are so many great recipes that you can prepare during your camping vacation. I like to think of such classics as OnePot pasta.

In this case, it has become an Indian-English Kedgeree. This specialty made of rice and fish originated there in the colonial period and was originally eaten for breakfast. Meanwhile, it is rather a main dish for the later hours of the day.

The nice thing about kedgeree is that you can theoretically prepare it with only one pot (but two are more practical). Also, the logistical effort is not that big. In this recipe I would like to show you how I cooked the kedgeree at the campsite.

 

Ingredients for 4 Persons

  • 3 eggs
  • 300g smoked fish (e.g. mackerel or trout)
  • 1 cup of cream (200 ml)
  • 1,5 cups of rice
  • 1 tablespoon curry powder
  • 1 tablespoon butter
  • salt, pepper and some paprika powder
  • 1 onion
  • 1 garlic clove

Prepration of the Kedgeree

1. Boil the eggs hard and the rice in the pot according to the instructions on the packet. So that you have to use fewer pots, you can simply follow these steps one after the other.

2. Cut the fish into small, bite-sized pieces. Chop onions and garlic and sweat them in butter in a pot. Then add the curry powder, some salt and pepper and the cooked rice and fry everything briefly.

3. Next, pour on the cream, mix everything together and let the kedgeree simmer a little longer. Peel the boiled eggs and chop them into small pieces except for one. The rest of the egg can be cut into quarters.

4. Mix the eggs together with the finely chopped fish under the kedgeree. If you like, you can also garnish with some parsley. Done!

English kedgeree is a great alternative camping recipe to canned ravioli if you ever go to a festival or camping. But this Indian English food tastes really good and is quick to cook.
