Pineapple Curry Fried Rice from Food Wars

A pineapple filled with fried rice. This not only looks surprising, but it is also surprisingly delicious. We saw this recipe for the first time in our new favorite series „Food Wars“. It’s a Japanese anime series that introduces new recipes and ways of preparing food in its own unique way in each episode.

You can get to know Japanese delicacies such as Gyudon Donburi, but you can also learn a lot about Indian cuisine or European specialties that I didn’t know myself.

I have adapted the original recipe for the Pineapple Rice from Food Wars. This recipe is one of my personal favorites because I love Asian food and you can prepare it vegan, vegetarian or with eggs. The pineapple also gives the fried rice a wonderfully fruity taste.  Believe me, it was so delicious that I am proud of myself ^^.

Ingredients for the Pineapple Fried Rice

Basic ingredients:

  • 1 cup of rice
  • 1 pineapple
  • 1 egg (optional)
  • 1 red bell pepper
  • 1 small carrot
  • 2 medium-sized spring onions
  • 1 green chili pepper (optional)
  • 1 crushed clove of garlic
  • 1 tablespoon rice wine vinegar*
  • 1 tablespoon fish sauce*
  • 1 tablespoon sesame oil* or olive oil
  • 1 tablespoon soy sauce*
  • Vegetable oil
  • Salt
  • Chopped cashew nuts

Preparation of the Pineapple Fried Rice

1. Freshly ground spices are not comparable with commercial spice powders. Therefore we start with the roasting of our spice mixture. Mix dried chili, coriander seeds, cardamom, cumin, mustard seeds, cinnamon stick and peppercorns in a saucepan or pan. Roast them dry on a high heat until they smell and start smoking easily. Then grind the spices in a spice mill or mortar and set aside.

2. Next, place 1 cup of short-grain rice and 2 cups of water in a pot and boil. Make sure that the rice is not completely cooked, because we will steam it a little more in our hollowed pineapple. Once the rice is cooked, spread it out on a plate so that no lumps appear when it cools down.

3. Cut the red peppers, carrots, green onions, green chili and chop the cashew nuts.

4. Cut the pineapple in two halves, cut the inside into cubes of about 2 cm and hollow out the pineapple. You can put the pineapple cubes aside for now.

5. Heat 2 tablespoons of vegetable oil in a wok at maximum heat. Optionally, add a beaten egg to the wok and let it falter semi-solidly. Then add the chopped red bell pepper, carrot and green chili pepper. Add grated ginger, turmeric and 1 crushed clove of garlic. Next, add the pre-cooked rice to the wok.

6. Next, add 2 teaspoons (or less) of our spice powder, some salt, 1 tablespoon each of rice wine vinegar, fish sauce, sesame oil and soy sauce.

7. Stir well and continue cooking over a high heat before adding a few pineapple cubes. Now add a few chopped spring onions and a handful of chopped cashews.

8. Salzt beide Seiten der Ananas. Wenn sie nicht gesalzen ist, wird der Reis richtig süß.

9. Füllt eine Hälfte der Ananas mit dem gesamten Reis und formt daraus einen Hügel. Mit der anderen Seite der Ananas bedecken und für 30 Minuten in den Ofen bei 190°C schieben. Wenn der Reis vorab schon gut durchgekocht ist, lasst die Ananas in diesem Schritt nur für 15 Minuten im Ofen. Dass Backen im Inneren der Ananas ergibt einen Ananas-artigen Geschmack und Geruch. Es ist einfach exotisch!

10. With the help of a slightly buttered form you can now arrange the rice in the pineapple-look like in the picture and serve it. Bon appetite.

Pineapple Fried Rice from Food Wars – Our conclusion

I mentioned it at the beginning: It is so delicious that I am proud of my cooking attempt (editor’s note: Henrik agrees). Even if you don’t want to wait and don’t want to cook the rice in the pineapple, pineapple fried rice is really delicious. If you want to impress your guests, rice in a pineapple is of course a great eye-catcher.
