Aloo Paratha is a popular Indian breakfast that is eaten in the northern, western and central regions of India. In the Urdu language, „Aloo“ is the word for potatoes with which this flatbread is filled or mixed. „Paratha“ is a word combination of parat and atta and means „layers of baked dough“. Paratha is one of the basic recipes of Indian cuisine, along with the better known Naan bread.

So it’s pretty much clear what you’ll get as a delicious snack with Aloo Paratha: layers of baked bread filled with potatoes. Add a few spices, put everything in the pan and you have a typical Indian meal. A fresh yogurt sauce, a tasty Palak-Dal or the vegetable puree Pav Bhaji go well with it.

Ingredients for Aloo Paratha (4 Persons)

For the Paratha-Bread:

  • 200g flour
  • Water
  • Salt and pepper
  • 1EL Olive oil

For the Aloo-Filling:

  • 5-6 potatoes
  • 1 thumb-sized piece of ginger
  • 1 chili pod
  • 1 small bunch of coriander
  • 1TL turmeric
  • ½ TL Curry powder
  • 1TL paprika powder
  • ½ EL Fennel seeds

Preparation of the Aloo Paratha

1. First boil the potatoes until they are done and then let them cool down. Then you can peel them for the filling.

2. Meanwhile, mix the flour, some oil, water, salt and pepper to a dough. This can be a bit soft, but should not stick. If necessary you have to adjust it with some water or flour. Then put it aside.

3. The people in India seem to like pulpy food. So the next step is to mash the potatoes.

4. Now it’s the turn of the chili pepper, the piece of ginger and the bunch of coriander, which you chop into small pieces.

5. Heat oil in a large pan and roast the fennel seeds, ginger and chili.

6. Next add the spices and after about 30 seconds the cooked potatoes. Mix everything well. After about another minute you can add the chopped coriander. Mix everything again and if necessary add some lemon and salt to taste and put aside.

7. Now it goes back to the dough. Take a small handful of dough and squeeze it out by hand into a circle. Now fill a tablespoon of the potato mass into the dough, close the whole thing and roll it out to a large slice.

8. I fry them in a pan with a little oil on both sides for about 2 minutes each and then put them aside on a kitchen roll.

9. If you like, you can also make a delicious dip with Aloo Paratha. Simply mix 250g yogurt with a teaspoon of salt, cumin and dried mint. This dip gives the Aloo Paratha flat cake a wonderful fresh taste contrast. Bon appetite ^^

Aloo Paratha – My conclusion

The Indian aloo paratha reminds me very much of Spanish tortilla, even though they use eggs as „dough“. This Indian finger food is definitely worth the effort, because you can prepare it for a party and warm it up again later. Aloo Paratha also complements any Indian-influenced buffet and is great to eat with Butter Chicken, Dal and Co.
