Begun Bhaja – Baked Indian eggplant in wrap

Eggplants are great as an ingredient in casseroles (think of the Greek moussaka), stuffed as sheik al mashi, rolled up like the Georgian Badridschani, and of course as finger food.

Last week Pragya cooked another delicious Indian dish. There was Begun Bhaja (or Baingan Bahja), thick slices of eggplant marinated in oil and a variety of spices and then baked in the oven or fried in oil.

These Indian eggplant slices can then be snacked as finger food or used as a filling for wraps. In this recipe, I will show you how to prepare this quick dish.

Ingredients for 4 people

  • Two eggplants
  • 80-100 ml olive oil
  • 1 tablespoon ginger garlic paste
  • ½ EL Kukuma
  • ½ tbsp. cumin
  • ½ tablespoon of paprika
  • ¼ EL Garam Masala
  • 1 tablespoon coriander powder
  • Salt
  • Wraps and other fillings of your choice

Preparation of the Begun Bahja 

1. Wash the eggplants and then cut them into slices about 1cm thick and put them aside first.

2. Mix all the spices together with the ginger-garlic paste and oil to a smooth cream. If you want to fry the Indian eggplant slices later, you can use less oil.

3. Now mix the eggplant slices well with the spice cream and let them steep for a few minutes.

4. Preheat either oil in a pan or the oven to approx. 180°C circulating air. Lay out the eggplant slices on a grid covered with baking paper and then bake them in the oven for approx. 20 minutes until golden brown.

4b. If you prefer to prepare the Begun Bahja in a pan or deep fryer, you can do so without any problems until the slices are a little golden brown.  The result in the frying pan will probably be a little softer than the oven version, but the oil will give it a little more flavor.

5. Serve the eggplant slices either as a snack or together with other ingredients in a wrap.

Begun Bahja – My conclusion about the Indian eggplant slices

Classic case of quickly cooked and quickly plastered. The effort for the Begun Bahja is really limited and with the spices, you can also experiment a little bit. Together with the wraps, these Indian eggplant slices were a delicious dinner which we will prepare more often in the future.
